Between 2008 and 2019, François Isambert took over the La Fajolle fish farm, located in the heart of the Cathar Pyrenees at an altitude of 1150 meters in the upper Aude Valley. It was on this small-scale farm, certified organic (AB) since 2001, that he conceived and then brought to fruition this entirely new project: producing the first certified organic canned small fish. A product that is as innovative in taste as it is environmentally sound.
Several years were needed to fully master the fish farming cycle, develop the recipes, test the manufacturing and preservation processes, carry out the first transformations and finally launch, in the spring of 2019, the La Truitelle canned goods.
Today, La Truitelle produces the majority of its fish at its fish farm in Saint-Rome-de-Cernon, Aveyron. The remaining fish are produced by partner fish farmers in Occitanie.
The company has since received numerous awards and distinctions recognizing its commitments.
