Farmers, market gardeners, organic growers and beyond who maintain and renew cultivated biodiversity by growing old, landrace or peasant varieties on their land, from non-hybrid F1 seeds, reproducible from artisan seed producers* or selected from their own harvest.
*Organic seed producers, defenders of cultivated biodiversity, offer a 100% organic catalogue and natural “open pollinating” seeds, not F1 hybrids. They select seeds from their own crops or those of partner seed growers, which they then resell in bags.

Multicolored lentils (mixture of varieties) Origin Gers, cultivated in agro-ecology and agro-forestry, selected on the farm from their own harvest and resown each year. Each harvest offers a unique blend of colors. The 2018 harvest features taupe shades.

Leave your lentils to soak in a large volume of water overnight. Rinse them, change the water and start cooking in cold water. Cook for approximately 45 minutes. These lentils remain al dente. Reheat with carrots, thyme or mix cold in a salad made up of seeds, shoots, herbs, raw vegetables, etc.
